I would like to introduce my nieces and nephews to AI and teach it to them. I am wondering those have dealt with this before...

What is the best way to go about it? What are the must-cover topics to teach them? Are there any resources, courses, games etc that you recommend?

I am open to any and all suggestions. They are about 8-12 years old
